Ice Cream - Batch Freezers
Used to freeze and add air (overrun) to the ice cream mix. Ice cream mix is poured into the batch freezer at a temperature of around 4°C. It is then churned and cooled in the machine's barrel by refrigeration gas to a temperature of approx -7°C. Air (overrun) is also added by this churning process. A batch freezer will normally add between 50 - 100% air to the ice cream base mix.
